Chickpea and quinoa salad with lemon dressing

Ingredients

- •30g quinoa
- •1 400g can chickpeas, drained and rinsed
- •¼ cucumber, diced
- •2 handfuls cherry tomatoes, chopped
- •12 olives, chopped
- •2 tbsp pomegranate seeds
- •Zingy lemon dressing (see recipe)
Directions
Cooking mode
- 1. Rinse and cook the quinoa.
- 2. Make the dressing.
- 3. In a large bowl, add the quinoa, chickpeas, tomatoes, cucumber, olives and pomegranate seeds. Pour over the dressing and toss to coat.
