Chickpea and quinoa salad with lemon dressing

Ingredients

serves 2
  • 30g quinoa
  • 1 400g can chickpeas, drained and rinsed
  • ¼ cucumber, diced
  • 2 handfuls cherry tomatoes, chopped
  • 12 olives, chopped
  • 2 tbsp pomegranate seeds
  • Zingy lemon dressing (see recipe)

Directions

Cooking mode
  1. 1. Rinse and cook the quinoa.
  2. 2. Make the dressing.
  3. 3. In a large bowl, add the quinoa, chickpeas, tomatoes, cucumber, olives and pomegranate seeds. Pour over the dressing and toss to coat.
