Whipped cream filling

Ingredients
serves 16-20
- •200g vegan double cream (Elmlea)
- •1½ tbsp icing sugar
- •¼ tsp vanilla extract
Directions
Cooking mode
- 1. In a large bowl, add the cream and whisk with a hand mixer on medium speed for 30 seconds. Mix in the icing sugar.
- 2. Continue to mix at a high speed until stiff peaks form.
- 3. Add the vanilla and mix on low for a few seconds to combine. Transfer to the fridge for at least 1 hour.
