Tomato salsa

Ingredients
serves 6
- •6 plum tomatoes
- •½ tbsp olive oil
- •½ red onion
- •1 garlic clove
- •1 tsp chilli powder (or 1 jalapeño)
- •15 sprigs fresh coriander, rinsed
- •Sea salt, to taste
Directions
- 1. Preheat the oven to 180°C. Prepare a baking tray with baking paper.
- 2. Place the tomatoes on the baking tray and brush with olive oil. Roast for 20 minutes or until they start to pop.
- 3. Roughly slice the onion and place in a bowl of cold water for 5 minutes.
- 4. In a food processor, add the onion, garlic, tomatoes, chilli, salt and coriander.
- 5. Blend until almost smooth. Season to taste.
- 6. Serve warm or cold, with tortillas, tacos, fajitas and more.
