Tomato bruschetta

Ingredients
serves 4
- •½ large baguette
- •200g cherry tomatoes
- •1 garlic clove
- •Handful fresh basil leaves
- •½ tsp dried oregano
- •Extra-virgin olive oil, to taste
Directions
- 1. Slice the baguette into 1cm thick slices. Add to large pan on a medium heat, and cook until lightly toasted. Turn over and toast the other side.
- 2. Chop the tomatoes into small chunks. Chop the garlic clove in half.
- 3. Rub the inside of the garlic onto each slice of toasted bread for a few seconds. Top each slice with tomatoes and herbs. Drizzle with olive oil and serve.
