Tofu sesame salad bowl

Ingredients

- •225g extra firm tofu, cubed
- •1 tbsp sesame oil
- •2 tbsp soy sauce
- •2 large carrots, grated
- •100g sugar snap peas
- •½ medium cucumber, chopped
- •100g edamame, cooked
- •2 tbsp sesame oil
- •1 tbsp soy sauce
- •Juice of 1 lime
- •½ tsp ginger
- •Sesame seeds
Directions
- 1. In a large pan, heat 1 tbsp sesame oil. Fry the tofu on a medium-high heat for a few minutes. Add 2 tbsp soy sauce and continue to cook, turning occasionally to brown each side.
- 2. Make the dressing by mixing together the remaining sesame oil, soy sauce, lime and ginger.
- 3. Assemble the salads, drizzle with the dressing, and sprinkle with sesame seeds.
