Super seeded soda bread rolls

Ingredients

- •500g strong bread flour or plain flour
- •2 tsp bicarbonate of soda
- •8g sea salt
- •1 400g can chickpeas
- •150ml soya milk, plus extra for brushing
- •2 tbsp olive oil
- •2 tbsp apple cider vinegar
- •30g sunflower seeds
- •20g pumpkin seeds
- •20g chia seeds
- •10g flaxseeds

- •15g sesame seeds
Directions
Cooking mode
- 1. In a small bowl, add the chia seeds and 4 tbsp water. Set aside for 10 minutes.
- 2. In a large bowl, mix together the flour, baking powder, salt and seeds.
- 3. In a blender, add the chickpeas and aquafaba, soya milk, olive oil and apple cider vinegar. Blend until smooth. Add the chickpea mixture and chia seeds to the dry ingredients. Mix until a dough forms, then cover and leave to reset for 10 minutes.
- 4. Preheat the oven to 180°C. Prepare 2 large baking trays with parchment paper.
- 5. Divide the dough into 16 equal portions. Shape each portion into round ball, then press to flatten slightly.
- 6. Transfer to a baking tray. Brush the top of each roll with soya milk. Top with sesame seeds.
- 7. Bake for 25-30 minutes until golden brown. For crusty bread, increase the oven to 190°C and bake for another 5 minutes. Transfer to a wire rack to cool before serving.
