Strawberry jam filling

Ingredients
serves 1 cake
- •450g fresh strawberries, stems removed
- •150g granulated white sugar
- •2 tbsp lemon juice
Directions
- 1. Add strawberries to a food processor and pulse until puréed.
- 2. In a saucepan, add the strawberry purée, sugar and lemon juice. Simmer on medium-low heat for 20-25 minutes until very thick.
- 3. Remove from the heat and allow the jam to cool completely.
