Spelt soda bread

Ingredients
makes 1 loaf
- •350g wholemeal spelt flour
- •115g white spelt flour or plain flour
- •1½ tsp bicarbonate of soda
- •½ tsp fine salt
- •2 tbsp apple cider vinegar
- •430ml non-dairy milk
Directions
Cooking mode
- 1. Preheat the oven to 200°C and line a baking tray with parchment paper.
- 2. Add the apple cider vinegar to a measuring jug, then add the milk and set aside for 2 minutes.
- 3. In a large bowl, mix together the flours, bicarbonate of soda and salt. Add the buttermilk and mix until a soft, slightly sticky dough forms.
- 4. Knead lightly in the bowl for 1 minute. Add a little extra flour if needed.
- 5. Form a ball of dough and place on the baking tray. Cut a deep cross in the centre, almost to the bottom. Bake for 25-30 minutes until a golden crust forms. The loaf should sound hollow when tapped underneath.
- 6. Transfer to a wire rack to cool completely before slicing.
