Spelt soda bread

Ingredients

makes 1 loaf
  • 350g wholemeal spelt flour
  • 115g white spelt flour or plain flour
  • 1½ tsp bicarbonate of soda
  • ½ tsp fine salt
  • 2 tbsp apple cider vinegar
  • 430ml non-dairy milk

Directions

Cooking mode
  1. 1. Preheat the oven to 200°C and line a baking tray with parchment paper.
  2. 2. Add the apple cider vinegar to a measuring jug, then add the milk and set aside for 2 minutes.
  3. 3. In a large bowl, mix together the flours, bicarbonate of soda and salt. Add the buttermilk and mix until a soft, slightly sticky dough forms.
  4. 4. Knead lightly in the bowl for 1 minute. Add a little extra flour if needed.
  5. 5. Form a ball of dough and place on the baking tray. Cut a deep cross in the centre, almost to the bottom. Bake for 25-30 minutes until a golden crust forms. The loaf should sound hollow when tapped underneath.
  6. 6. Transfer to a wire rack to cool completely before slicing.
