Soya mince ragu

Ingredients
serves 4
- •100g soya mince
- •1 tbsp vegetable oil
- •1 onion, chopped
- •1 garlic clove, crushed
- •2 carrots, chopped
- •1 400g can chopped tomatoes
- •1 tbsp tomato paste
- •500ml vegetable stock
- •1 tsp dried oregano
- •½ tsp dried thyme
- •½ tsp dried rosemary
- •½ tsp sea salt, to taste
- •Black pepper, to taste
Directions
- 1. In a small bowl, add the soya mince and enough vegetable stock to just cover it. Leave to sit for 5-10 minutes.
- 2. In a large pan, heat the oil. Add the onion and cook for 3 minutes until slightly softened. Add the garlic and cook for 1 more minute. Add the carrot and soya mince and cook for a few more minutes.
- 3. Stir in the tomatoes, tomato paste, herbs, seasoning and vegetable stock as needed. Simmer for 20 mins until slightly thickened, stirring frequently.
- 4. Serve with pasta or crusty bread.
