Directions
Cooking mode
- 1. In a small bowl, add the soya mince and enough vegetable stock to just cover it. Leave to sit for 5–10 minutes.
- 2. In a large pan, heat the oil. Add the onion and cook for 3 minutes until slightly softened. Add the garlic and cook for 1 more minute. Add the carrot and soya mince and cook for a few more minutes.
- 3. Add the pepper and courgette. Stir in the tomatoes, tomato paste, oregano, seasoning and vegetable stock as needed. Simmer for 15 minutes until slightly thickened, stirring frequently.
- 4. Preheat the oven to 190°C. Make the bechamel sauce.
- 5. Assemble the lasagne in a large dish. Spoon half of the ragu onto the bottom of the dish. Cover with a layer of lasagne sheets, then top with half of the bechamel sauce. Repeat with the ragu, lasagne sheets, and bechamel sauce. Sprinkle with nutritional yeast and cook for 30 minutes until bubbling and golden on top.
