Sourdough Chocolate Cake

Ingredients
makes 1 cake
- •150g self-raising flour
- •25g cocoa powder
- •1 tsp bicarbonate of soda
- •½ tsp salt
- •120g caster sugar
- •120g discarded starter straight from the fridge
- •120ml cold water
- •1 tbsp apple cider vinegar
- •2 tsp vanilla extract
- •80ml vegetable oil
- •3 tbsp aquafaba
Directions
- 1. Preheat the oven to 180°C. Grease and line a cake tin or loaf tin.
- 2. In a medium bowl, combine the flour, cocoa powder, baking soda, salt and sugar.
- 3. In a large bowl, whisk together the starter, water, vinegar, vanilla extract, oil and aquafaba. Add the dry ingredients to the wet, and stir until combined.
- 4. Pour the batter into the tin and bake for 25 to 30 minutes or until a skewer inserted in the centre comes out clean.
