Sourdough bruschetta

Ingredients
serves 4
- •250g mixed baby tomatoes, chopped
- •2 tablespoons olive oil
- •1 tablespoon apple cider vinegar
- •1 tablespoon balsamic vinegar
- •1 large handful of basil, chopped
- •2 tablespoons capers, drained and rinsed
- •4 slices sourdough bread
- •1 garlic clove, halved
Directions
- 1. In a medium bowl, mix the tomatoes with all the ingredients except for the garlic.
- 2. Toast each slice of bread in a pan on medium-high heat. Cut each slice in half and set aside.
- 3. Rub each slice with half a garlic clove. Top with a large spoonful of the tomato mixture and serve.
