Smoky cauliflower steak

Ingredients

- •1 cauliflower, leaves removed
- •2 tbsp olive oil
- •1 tbsp brown miso paste
- •1 tsp smoked paprika or curry powder
- •1 tsp chilli powder
- •½ tsp turmeric
- •1 tbsp balsamic vinegar
- •1 tbsp soy sauce
- •1 tbsp maple syrup or honey
- •1 tbsp pumpkin seeds or flaked almonds
- •1 handful of coriander, chopped
Directions
- 1. Preheat the oven to 180°C. Slice the middle of the cauliflower into 2 steaks about 2cm.
- 2. In a small bowl, mix the olive oil, spices, miso paste, vinegar, soy sauce and maple syrup. Brush half the mixture over both sides of the cauliflower steaks. Place the steaks on a prepared baking tray and bake for 15 minutes. Turn over, top with pumpkin seeds or flaked almonds, and bake for another 15-20 minutes until softened.
- 3. Add coriander to the remaining sauce and mix. Heat in a small pan for 2 minutes on a medium heat.
- 4. Serve the cauliflower steaks topped with the sauce a garnish of coriander.
