Simple vanilla cake

Ingredients

- •285g self-raising flour
- •150g granulated sugar
- •20g cornflour
- •¾ tsp baking powder
- •¼ tsp baking soda
- •¼ tsp sea salt
- •375ml soya milk
- •155ml vegetable oil
- •2½ tbsp apple cider vinegar
- •2 tsp vanilla extract
- •150g jam, such as strawberry or raspberry
Directions
- 1. Preheat the oven to 180°C. Prepare two 18cm round cake pans.
- 2. In a large bowl, mix together the flour, sugar, cornflour, baking powder, baking soda and salt.
- 3. In a measuring jug, whisk together the milk, oil, vinegar and vanilla extract.
- 4. Add the wet ingredients to the dry and mix until combined. Divide the batter evenly between the prepared cake pans and bake for 32-35 minutes, until a skewer inserted into the centre comes out clean. Leave to cool before assembling.
- 5. Spread the jam on one cake layer, then add the top cake layer.
