Simple black bean salad

Ingredients
serves 2-3
- •1 400g black beans, drained and rinsed
- •1 bell pepper, chopped
- •2 large tomatoes, chopped
- •¼ cucumber, chopped
- •1 avocado, chopped
- •75g sweetcorn (optional)
- •Handful coriander chopped
- •Juice of ½ lemon
- •2 tbsp extra virgin olive oil
- •¼ tsp sea salt
- •¼ tsp garlic powder
- •½ tsp cumin
- •¼ tsp chilli powder
Directions
- 1. Combine all the vegetables and coriander in medium bowl.
- 2. To make the dressing, whisk together the remaining ingredients. Pour over the salad and mix again.
