Roasted cauliflower and hummus pittas

Ingredients
serves 2
- •1 small cauliflower, chopped
- •1 tbsp olive oil
- •½ tsp turmeric
- •½ tsp cumin
- •¼ tsp chilli powder
- •Pinch sea salt
- •2 wholemeal pittas
- •4 tbsp hummus
- •2 large handfuls rocket
- •2 tsp pomegranate seeds (optional)
Directions
- 1. Preheat the oven to 190°C. Place the cauliflower on a lined baking tray. Drizzle with the olive oil and spices, and toss well until evenly coated. Roast for 20 minutes.
- 2. Toast the pittas and slice open. Spread 1 tbsp of hummus in each pitta. Add the rocket then cauliflower. Top with pomegranate seeds and serve.
