Quinoa and black bean bowl

Ingredients

- •80g quinoa
- •1 400g can black beans
- •1 pepper, chopped
- •150g cherry tomatoes, chopped
- •1 garlic clove, crushed
- •2 tbsp olive oil
- •Juice ½ lime
- •½ tsp paprika
- •½ tsp cumin
- •½ tsp turmeric
- •¼ tsp coriander
- •¼ tsp chilli powder
- •Pinch sea salt, to taste
- •Handful fresh coriander, finely chopped
Directions
- 1. Cook the quinoa for 15-20 minutes, until softened with a slight crunch.
- 2. Meanwhile, in a large frying pan, heat 1 tbsp oil and add the peppers. Cook for a few minutes, then add the garlic and cook for one more minute. Stir in the black beans and spices, and continue to cook until the peppers start to soften. Add the tomatoes and lime juice and cook for a few more minutes.
- 3. When the quinoa is ready, transfer to a large bowl. Mix in the cooked veggies, 1 tbsp olive oil and the coriander. Serve warm or cold.
