Quinoa and butter bean salad

Ingredients

serves 4
  • 250g quinoa
  • 1 400g butter beans
  • 1 medium cucumber, chopped
  • 100g cherry tomatoes, chopped
  • 80g sweetcorn
  • 8 sun-dried tomatoes, chopped
  • 2 tbsp balsamic vinegar
  • 3 tbsp extra virgin olive oil
  • ¼ tsp sea salt, to taste

Directions

  1. 1. Cook the quinoa.
  2. 2. Add the quinoa, butter beans, cucumber, tomatoes and sweetcorn to a large bowl. Gently mix, then drizzle over the salt, balsamic vinegar and olive oil. Toss together and serve chilled.
