Quinoa and butter bean salad

Ingredients
serves 4
- •250g quinoa
- •1 400g butter beans
- •1 medium cucumber, chopped
- •100g cherry tomatoes, chopped
- •80g sweetcorn
- •8 sun-dried tomatoes, chopped
- •2 tbsp balsamic vinegar
- •3 tbsp extra virgin olive oil
- •¼ tsp sea salt, to taste
Directions
- 1. Cook the quinoa.
- 2. Add the quinoa, butter beans, cucumber, tomatoes and sweetcorn to a large bowl. Gently mix, then drizzle over the salt, balsamic vinegar and olive oil. Toss together and serve chilled.
