Pitta bread

Ingredients

  • 400g plain flour
  • 8g sea salt
  • 7g instant yeast
  • 250ml warm water
  • 1 tsp granulated sugar
  • 1 tbsp olive oil

Directions

Cooking mode
  1. 1. In a large bowl, combine the flour, salt and yeast.
  2. 2. In a measuring jug, mix together the warm water and sugar. Stir in the oil. Pour into the flour mixture and mix until a rough dough forms.
  3. 3. Turn the dough out onto a surface and knead for about 10 minutes until smooth and elastic.
  4. 4. Place the dough in a lightly oiled bowl, cover with a damp cloth, and set aside in a warm place for about 1½ hours, or until doubled in size.
  5. 5. Punch down the dough to release any air bubbles. Divide into 8 equal pieces. Roll each piece into a ball. Cover with a damp cloth and set aside for 45 mins until roughly doubled in size.
  6. 6. Heat a large pan over medium-high heat. Place a ball of dough on a floured surface and roll into a circle, roughly 20cm wide. Add to the pan and cook for 2-3 minutes on one side, until it starts to puff up and brown spots appear on the bottom. Flip and cook for another 1-2 minutes. Transfer to a plate and cover with kitchen towel to keep them soft and warm. Repeat with the remaining portions of dough.
  7. 7. Store in an airtight container in the fridge or freezer.
