Pitta bread

Ingredients

- •400g plain flour (or mix with 100g strong bread flour)
- •8g sea salt
- •7g instant yeast
- •250ml warm water
- •1 tsp granulated sugar
- •1 tbsp olive oil
Directions
Cooking mode
- 1. In a large bowl, combine the flour, salt and yeast.
- 2. In a measuring jug, mix together the warm water and sugar. Stir in the oil. Pour into the flour mixture and mix until a rough dough forms.
- 3. Turn the dough out onto a surface and knead for about 10 minutes until smooth and elastic.
- 4. Place the dough in a lightly oiled bowl, cover with a damp cloth, and set aside in a warm place for about 1½ hours, or until doubled in size.
- 5. Punch down the dough to release any air bubbles. Divide into 8 equal pieces. Roll each piece into a ball. Cover with a damp cloth and set aside for 1 hour, until roughly doubled in size.
- 6. Heat a large pan over medium-high heat. Roll a peice of dough into a circle, roughly 20cm wide. Reduce the heat to medium, then add to the pan and cook for 2 minutes on one side, until it starts to puff up and brown spots appear on the bottom. Flip and cook for another 1-2 minutes. Transfer to a plate and cover with kitchen towel to keep soft and warm. Repeat with the remaining portions of dough.
- 7. Store in an airtight container for 2 days or freeze.
