Peppermint frosting

Ingredients
1 cake or 12 muffins
- •90g vegan butter
- •250g icing sugar, sieved
- •1½ tsp peppermint extract
- •1-2 drops green food colouring
Directions
- 1. Using a mixer, beat the butter until light and fluffy.
- 2. Gradually beat in the sugar. Add the peppermint extract and food colouring. Blend until whipped and creamy.
- 3. Spread or pipe on top of the cake, and add your favourite mint chocolate toppings to decorate.
