Peanut butter and jam oat bars

Ingredients

makes 12
  • 215g peanut butter
  • 35g maple syrup
  • 25g vegetable oil
  • 125g rolled oats
  • 100g oat flour
  • ¼ tsp baking powder
  • 2-3 tbsp water
  • 140g raspberry jam

Directions

  1. 1. Preheat the oven to 180°C. Line a 8x8 baking tin with baking paper.
  2. 2. Set 60g of the peanut butter aside. In a large bowl, combine all the wet ingredients.
  3. 3. Add the dry ingredients and mix well to form a dough. Add the water, 1 tbsp at a time, until the mixture comes together.
  4. 4. Place ¾ of the dough into the baking tin and press down firmly with the back of a spoon. Bake the layer for 10 minutes, then remove from the oven and leave to cool for 10 minutes.
  5. 5. Spread the remaining peanut butter evenly on top of the baked layer. Spread a layer of jam on top.
  6. 6. Crumble up the remaining dough and spread evenly on top. Add a handful of frozen raspberries if desired. Bake for 25 minutes.
  7. 7. Leave to cool completely, then cut into squares.
