Peanut butter and jam oat bars

Ingredients

- •215g peanut butter
- •35g maple syrup
- •25g vegetable oil
- •125g rolled oats
- •100g oat flour
- •¼ tsp baking powder
- •2-3 tbsp water
- •140g raspberry jam
Directions
- 1. Preheat the oven to 180°C. Line a 8x8 baking tin with baking paper.
- 2. Set 60g of the peanut butter aside. In a large bowl, combine all the wet ingredients.
- 3. Add the dry ingredients and mix well to form a dough. Add the water, 1 tbsp at a time, until the mixture comes together.
- 4. Place ¾ of the dough into the baking tin and press down firmly with the back of a spoon. Bake the layer for 10 minutes, then remove from the oven and leave to cool for 10 minutes.
- 5. Spread the remaining peanut butter evenly on top of the baked layer. Spread a layer of jam on top.
- 6. Crumble up the remaining dough and spread evenly on top. Add a handful of frozen raspberries if desired. Bake for 25 minutes.
- 7. Leave to cool completely, then cut into squares.
