Peanut butter and jam oat bars

Ingredients

- •200g peanut butter
- •45g maple syrup
- •25g vegetable oil
- •140g oats
- •70g oat flour
- •¼ tsp baking powder
- •¼ tsp sea salt
- •4-6 tbsp plant milk
- •160g jam, such as raspberry, strawberry, blueberry or blackcurrant
Directions
Cooking mode
- 1. Preheat the oven to 180°C. Line an 8x8 dish with baking paper.
- 2. Set aside 50g of the peanut butter. In a large bowl, combine the remaining peanut butter, maple syrup, vegetable oil and 50ml plant milk.
- 3. Add the oats, oat flour, baking powder and salt and mix well to form a soft, slightly sticky dough. Add another tbsp milk as needed until the mixture holds together.
- 4. Place ¾ of the dough into the baking tin and press down firmly with the back of a spoon. Bake the layer for 7-8 minutes, then remove from the oven.
- 5. Spread the remaining peanut butter evenly on top of the baked layer. Spread the jam on top.
- 6. Crumble the remaining dough evenly over the top. Bake for 18-22 minutes, until golden. Leave to cool completely before slicing into bars.
