Pea and butter bean mash

Ingredients
serves 3
- •1 400g can butter beans, drained and rinsed
- •150g frozen peas
- •Juice and zest of ½ a lemon
- •2 tbsp olive oil
- •Large handful fresh parsley, chopped
- •½ tsp sea salt, to taste
Directions
- 1. Defrost the peas in a pan with water, simmering for 1 minute.
- 2. In a food processor, add all the ingredients and blend until almost smooth. Season to taste.
- 3. Gently heat the mash in a pan on a medium-low heat for 5-10 minutes, then serve.
