Ingredients

makes 5
  • 150g plain flour
  • 8g baking powder, or Paneangeli Lievito Vanigliato
  • 1 tbsp apple cider vinegar
  • 250ml oat milk
  • Vegan butter for frying

Directions

  1. 1. Add the apple cider vinegar then oat milk to a jug and let sit for 2 minutess without stirring.
  2. 2. Whisk together the flour and baking powder.
  3. 3. Heat the pan to medium-high heat, then add about ½ tsp of butter.
  4. 4. Pour the milk mixture into the flour and gently whisk together - do not over-mix! There should be some small lumps of flour remaining, which makes the pancakes become light and fluffy.
  5. 5. Spoon a ladle of batter into the pan and fry for a few minutes, until bubbles stop forming on the top. Flip the pancake and fry for another few minutes, until golden brown on both sides.
  6. 6. Serve with your favourite toppings.
