Pancakes

Ingredients

- •150g plain flour
- •8g baking powder, or Paneangeli Lievito Vanigliato
- •1 tbsp apple cider vinegar
- •250ml oat milk
- •Vegan butter for frying
Directions
- 1. Add the apple cider vinegar then oat milk to a jug and let sit for 2 minutess without stirring.
- 2. Whisk together the flour and baking powder.
- 3. Heat the pan to medium-high heat, then add about ½ tsp of butter.
- 4. Pour the milk mixture into the flour and gently whisk together - do not over-mix! There should be some small lumps of flour remaining, which makes the pancakes become light and fluffy.
- 5. Spoon a ladle of batter into the pan and fry for a few minutes, until bubbles stop forming on the top. Flip the pancake and fry for another few minutes, until golden brown on both sides.
- 6. Serve with your favourite toppings.
