Mashed avocado and edamame on toast

Ingredients

serves 2
  • ½ large ripe avocado
  • 100g edamame, cooked
  • Juice of ½ lime
  • Small handful fresh coriander
  • ¼ tsp sea salt
  • 3 tbsp water
  • 1 tbsp hemp seeds
  • 1 tbsp pumpkin seeds
  • Ground black pepper
  • 4 slices sourdough, toasted

Directions

Cooking mode
  1. 1. Add the avocado, edamame, lime, coriander, salt and water to a food processor. Blend until a chunky paste forms, scraping down the sides as needed.
  2. 2. Serve on the sourdough, topped with black pepper, hemp seeds and pumpkin seeds.
