Mashed avocado and edamame on toast
breakfast

Ingredients
serves 2
- •½ large ripe avocado
- •100g edamame, cooked
- •Juice of ½ lime
- •Small handful fresh coriander
- •¼ tsp sea salt
- •3 tbsp water
- •1 tbsp hemp seeds
- •1 tbsp pumpkin seeds
- •Ground black pepper
- •4 slices sourdough, toasted
Directions
Cooking mode
- 1. Add the avocado, edamame, lime, coriander, salt and water to a food processor. Blend until a chunky paste forms, scraping down the sides as needed.
- 2. Serve on the sourdough, topped with black pepper, hemp seeds and pumpkin seeds.
