Lemon icing
Ingredients
serves 1 cake or 12 muffins- 110g icing sugar, sieved
- 2–3 tbsp lemon juice

- Sift the sugar in a medium bowl. Mix with the lemon juice, 1 tbsp at a time, until smooth and the icing reaches the desired consistency.
- Drizzle on top of the cake, and add your favourite toppings to decorate.
