Italian salad

Ingredients

serves 3-4
  • 1 romaine lettuce, chopped
  • 2 large tomatoes, chopped
  • ½ cucmber, chopped
  • 1 large carrot, grated
  • 160g sweetcorn
  • 12 olives, chopped
  • 1 400g can cannellini beans, drained and rinsed
  • ½ tsp dried oregano
  • ½ tsp sea salt
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar

Directions

  1. 1. In a large bowl combine all the veggies and beans.
  2. 2. Sprinkle over the herbs and salt, then add the balsamic vinegar and olive oil.
  3. 3. Gently toss together until evenly coated.
