Ingredients
serves 3-4
- •1 romaine lettuce, chopped
- •2 large tomatoes, chopped
- •½ cucmber, chopped
- •1 large carrot, grated
- •160g sweetcorn
- •12 olives, chopped
- •1 400g can cannellini beans, drained and rinsed
- •½ tsp dried oregano
- •½ tsp sea salt
- •2 tbsp extra virgin olive oil
- •1 tbsp balsamic vinegar
Directions
- 1. In a large bowl combine all the veggies and beans.
- 2. Sprinkle over the herbs and salt, then add the balsamic vinegar and olive oil.
- 3. Gently toss together until evenly coated.
