Italian bean and olive salad

Ingredients
serves 2-3
- •120g mixed salad leaves, such as rocket, spinach and red chard
- •80g olives
- •160g sweetcorn
- •1 400g can butter beans, drained and rinsed
- •¼ large cucumber, chopped
- •1 large avocado, chopped
- •½ tsp sea salt
- •2 tbsp extra virgin olive oil
- •1 tbsp balsamic vinegar
Directions
- 1. In a large bowl combine all the veggies and beans.
- 2. Sprinkle over the salt, then add the balsamic vinegar and olive oil. Gently toss together until evenly coated.
