Harissa qunioa and roasted vegetable salad

Ingredients

- •80g quinoa
- •1 400g can black beans
- •2 bell peppers, chopped
- •½ broccoli, chopped
- •½ tsp turmeric
- •1 tsp smoked paprika
- •¼ tsp fine sea salt
- •2 tsp harissa paste
- •1 tbsp extra-virgin olive oil
Directions
- 1. Cook the quinoa for 15-20 minutes, until softened with a slight crunch.
- 2. Meanwhile, preheat the oven to 180°C. Roast the peppers and broccoli for 10-15 mins.
- 3. In a large bowl, add the quinoa, turmeric, paprika, salt, harissa paste and olive oil, and mix well.
- 4. Stir in the black beans and roasted vegetables. Serve warm or cold.
