Harissa qunioa and roasted vegetable salad

Ingredients

serves 2
  • 80g quinoa
  • 1 400g can black beans
  • 2 bell peppers, chopped
  • ½ broccoli, chopped
  • ½ tsp turmeric
  • 1 tsp smoked paprika
  • ¼ tsp fine sea salt
  • 2 tsp harissa paste
  • 1 tbsp extra-virgin olive oil

Directions

  1. 1. Cook the quinoa for 15-20 minutes, until softened with a slight crunch.
  2. 2. Meanwhile, preheat the oven to 180°C. Roast the peppers and broccoli for 10-15 mins.
  3. 3. In a large bowl, add the quinoa, turmeric, paprika, salt, harissa paste and olive oil, and mix well.
  4. 4. Stir in the black beans and roasted vegetables. Serve warm or cold.
