serves 3
  • •550g potatoes
  • •~90g plain flour
  • •1 tsp sea salt

Directions

Cooking mode
  1. 1. Preheat the oven to 200°C. Prepare a baking tray. Prick the potatoes in several places and bake for 50–60 minutes, until soft.
  2. 2. Slice open and leave to cool for 5 minutes, then scoop the flesh into a bowl. Mash until smooth.
  3. 3. Mix 70g flour and the salt together, then create a small mound and make a well in the centre. Place the mashed potato in the centre and gently bring together. Add more flour as needed, being careful not to overwork the dough.
  4. 4. Dust a surface with flour. Divide the dough evenly into four pieces (~100g). Roll each piece into a 2.5cm-thick log.
  5. 5. Cut the logs into 2.5cm-long pieces. Press each piece with a fork to create grooves.
  6. 6. Bring a large pan of salted water to boil. Add the gnocchi and cook for a few minutes, until they rise to the surface.
  7. 7. Serve with your favourite pesto or tomato sauce and roasted veggies.
