Fruit and walnut loaf

Ingredients
makes 1 loaf
- •390g strong white bread flour
- •7g instant yeast
- •10g sea salt
- •90g walnuts, chopped
- •100g dried fruit, such as cranberries, goji berries, raisins or blueberries
- •20g maple syrup or honey
- •360ml lukewarm water
Directions
Cooking mode
- 1. Add the dried fruit to a small bowl, cover with hot water and set aside for 10 minutes, then drain.
- 2. In a large bowl, combine the flour, yeast, salt, walnuts and fruit. In a measuring jug, combine the maple syrup and water. Add to the dry ingredients and mix until a sticky dough forms.
- 3. Cover with a damp tea towel and leave for 2 hours, until doubled in size.
- 4. Prepare a loaf tin.
- 5. Turn the dough onto a lightly floured surface and gently shape into a log. Transfer to the tin, cover with a damp tea towel and leave to rise for 1 hour.
- 6. Preheat the oven to 220°C.
- 7. Bake for 35-40 minutes, until golden brown and the loaf sounds hollow when tapped.
- 8. Transfer to a wire rack and leave to cool for at least 30 minutes before slicing.
