Edamame salad

Ingredients
serves 2
- •150g edamame, cooked
- •½ cucumber, diced
- •1 red bell pepper, diced
- •Large handful coriander, chopped
- •2 tsp sesame seeds
- •Juice of ½ a lime
- •1 tbsp sesame oil
- •1 tbsp reduced sodium soy sauce
- •1 tsp honey
- •¼ tsp ground ginger
Directions
- 1. In a large bowl, combine the edamame, cucumber, pepper, coriander and sesame seeds.
- 2. In a small measuring jug, whisk together the remaining ingredients.
- 3. Pour the dressing over the salad and toss together. Serve cold.
