Mashed edamame on toast

Ingredients

serves 2
  • 25g tahini
  • 140g edamame, cooked
  • ½ ripe avocado
  • 2 tsp soy sauce
  • ¼ tsp garlic powder
  • ¼ tsp chilli powder
  • Small handful fresh coriander
  • ½ tsp sesame oil or olive oil
  • Zest and juice of 1 lime
  • ¼ tsp sea salt
  • 1-2 tbsp water
  • 4 tsp hemp, pumpkin or sesame seeds
  • 4 slices sourdough, toasted

Directions

  1. 1. Add all ingredients except the seeds to a food processor and blend until a chunky dip forms. Season to taste.
  2. 2. Serve on the sourdough, and top with seeds.
