Mashed edamame on toast
breakfast

Ingredients
serves 2
- •25g tahini
- •140g edamame, cooked
- •½ ripe avocado
- •2 tsp soy sauce
- •¼ tsp garlic powder
- •¼ tsp chilli powder
- •Small handful fresh coriander
- •½ tsp sesame oil or olive oil
- •Zest and juice of 1 lime
- •¼ tsp sea salt
- •1-2 tbsp water
- •4 tsp hemp, pumpkin or sesame seeds
- •4 slices sourdough, toasted
Directions
- 1. Add all ingredients except the seeds to a food processor and blend until a chunky dip forms. Season to taste.
- 2. Serve on the sourdough, and top with seeds.
