Curried chickpea burgers

Ingredients

- •1 400g can chickpeas, drained and rinsed
- •2 tbsp cornflour
- •1 small onion, finely chopped
- •½ red pepper, finely chopped
- •15g fresh coriander, chopped
- •½ tsp salt
- •½ tsp garlic powder
- •1 tbsp curry powder
- •70ml water
- •½ tbsp olive oil
Directions
- 1. Preheat the oven to 180°C. Line a baking tray with parchment paper.
- 2. Mash the chickpeas in a large bowl with a fork.
- 3. Add the breadcrumbs, cornstarch, onion, bell pepper, coriander, salt, garlic powder, and curry powder to the mashed chickpeas. Stir to combine. Add the water and mix until a dough comes together.
- 4. Divide and shape into 6 small burgers. Brush with olive oil on both sides. Bake for 25-30 minutes, flipping halfway.
