Curried cauliflower

Ingredients

- •1 small cauliflower, cut into quarters
- •2 tbsp olive oil
- •1 tbsp tomato paste
- •1 tsp cumin
- •1½ tsp garam masala
- •1 tsp smoked paprika
- •½ tsp ground coriander
- •½ tsp garlic powder
- •½ tsp sea salt, to taste
- •125g unsweetened plant-based yoghurt
- •Juice of 1 small lemon
- •2 tbsp toasted flakes almonds
Directions
- 1. In a large pan, heat 1 tbsp olive oil. Fry the cauliflower on each side until browned. Add 150ml water and cover with a lid. Cook over medium heat for 10-15 minutes.
- 2. To make the sauce, combine the remaining tbsp of olive oil, tomato paste, spices, yoghurt and lemon juice. Mix until creamy, then warm through in a small pan over a medium-low heat for 5-10 minutes, stirring occasionally. Serve the cauliflower on a bed of sauce and topped with a drizzle more of the sauce and toasted flaked almonds.
