Creamy mushroom and spinach pasta

Ingredients
serves 2
- •180g dry pasta
- •1 tbsp olive oil
- •1 garlic clove, minced
- •250g mushrooms, sliced
- •Juice of ½ lemon
- •2 large handfuls spinach
Sauce
- •150ml soya milk
- •1 tbsp extra virgin olive oil
- •1 tsp white miso paste
- •2 tbsp nutritional yeast
- •Ground black pepper, to taste
Directions
Cooking mode
- 1. Cook the pasta, reserving some pasta water.
- 2. In a large pan, heat the olive oil and cook the garlic on a medium heat for 1 minute. Add the mushrooms and cook for 5-10 minutes.
- 3. In a measuring jug, whisk together the soya milk, miso paste, olive oil, nutritional yeast and seasoning. Add more milk as needed.
- 4. Pour the sauce into the pan of mushrooms and stir frequently until slightly thickened. Add a few tbsp of pasta water as needed. Stir in the lemon juice.
- 5. Add the pasta and spinach. Stir until heated through and the spinach has wilted. Season to taste. Serve topped with ground black pepper.
