Corn bread

Ingredients

makes 1 loaf
  • 120g plain flour
  • 150g cornmeal
  • 30g caster sugar
  • 1 tbsp baking powder
  • ½ tsp sea salt
  • 2 tbsp ground flaxseed
  • 6 tbsp water
  • 65ml vegetable oil
  • 300ml oat milk

Directions

Cooking mode
  1. 1. Whisk together the flaxseed and water in a small bowl and set aside for 15 minutes to thicken.
  2. 2. Preheat oven to 160°C and prepare a loaf tin.
  3. 3. In a large bowl, whisk together the flour, cornmeal, sugar, baking powder and salt.
  4. 4. Add the flax eggs, oil and oat milk. Mix until just combined.
  5. 5. Pour into the tin and smooth the top. Bake for 25-35 minutes, until golden and a skewer inserted in the centre comes out clean.
  6. 6. Transfer to a wire rack to cool completely before slicing.
