Corn bread

Ingredients
makes 1 loaf
- •120g plain flour
- •150g cornmeal
- •30g caster sugar
- •1 tbsp baking powder
- •½ tsp sea salt
- •2 tbsp ground flaxseed
- •65ml vegetable oil
- •300ml oat milk
Directions
Cooking mode
- 1. In a small bowl, add the flaxseed and 6 tbsp water. Mix together then set aside for 10 minutes.
- 2. Preheat oven to 160°C and prepare a loaf tin.
- 3. In a large bowl, whisk together the flour, cornmeal, sugar, baking powder and salt.
- 4. Add the flax eggs, oil and oat milk. Mix until just combined.
- 5. Pour into the tin and smooth the top. Bake for 25-35 minutes, until golden and a skewer inserted in the centre comes out clean.
- 6. Transfer to a wire rack to cool completely before slicing.
