Coffee frosting
Ingredients
serves 1 cake or 12 muffins- 75g plant butter
- 140g icing sugar, sieved, sieved
- ½ tsp vanilla extract
- 2 tsp instant coffee
- Pinch sea salt
- 1–2 tsp plant milk

- Dissolve the instant coffee in 1 tsp warm plant milk, then leave to cool slightly.
- In a medium bowl, beat the plant butter until creamy. Gradually add the icing sugar and beat until light and fluffy.
- Add the coffee mixture, vanilla and salt and beat until well combined. Add the remaining plant milk as needed and beat until smooth and fluffy.
