Chocolate mousse

Ingredients

- •Aquafaba from 1 400g can chickpeas
- •85g dark chocolate, melted
- •2 tbsp caster sugar
- •1 tsp vanilla extract
Directions
- 1. In a medium bowl, beat the aquafaba with a mixer until stiff peaks form (about 10 minutes). Gradually add the sugar and continue to beat. Allow the melted chocolate to cool a little.
- 2. Gently fold in the chocolate and vanilla. Divide between 4 glasses and refridgerate overnight.
