Chocolate mousse

Ingredients

serves 4
  • Aquafaba from 1 400g can chickpeas
  • 85g dark chocolate, melted
  • 2 tbsp caster sugar
  • 1 tsp vanilla extract

Directions

  1. 1. In a medium bowl, beat the aquafaba with a mixer until stiff peaks form (about 10 minutes). Gradually add the sugar and continue to beat. Allow the melted chocolate to cool a little.
  2. 2. Gently fold in the chocolate and vanilla. Divide between 4 glasses and refridgerate overnight.
