Chocolate chip rice flour cookies

Ingredients

- •200g rice flour
- •120g caster sugar
- •½ tsp baking powder
- •Pinch of sea salt
- •50ml vegetable oil
- •1 tbsp vanilla extract
- •6 tbsp aquafaba
- •75g dark chocolate chips
Directions
- 1. Pre-heat the oven to 160°C. Line two baking trays with baking paper.
- 2. In a large bowl, combine the flour, sugar, baking powder and salt into a bowl and mix well.
- 3. In a measuring jug, whisk together the oil, vanilla extract and aquafaba. Add to the dry ingredients and mix well.
- 4. Using your hands, gather everything together into a dry dough. Add the chocolate chips and work them into the dough.
- 5. Spoon 6-8 balls of dough onto each prepared baking tray, leaving space between each.
- 6. Bake for 18-20 minutes until the cookies are light brown on the edges and still slightly soft in the middle.
- 7. Leave to cool for 5 minutes then transfer the cookies to a cooling rack.
