Chocolate banana muffins

Ingredients

  • 180g self-raising flour
  • 35g cocoa powder
  • 1 tsp baking powder
  • ½ tsp bicarbonate soda
  • 1 overripe banana
  • 1 tsp pure vanilla extract
  • 1 tbsp apple cider vinegar
  • 65ml vegetable oil
  • 50g caster sugar
  • 2 tbsp maple syrup or honey
  • 200ml soya milk

Directions

Cooking mode
  1. 1. Preheat the oven to 180°C. Line a loaf tin.
  2. 2. In a medium bowl, add the flour, cocoa powder, baking powder and bicaronate of soda. Mix and set aside.
  3. 3. In a large bowl, mash the banana. Add the oil, sugar, maple syrup, vanilla, apple cider vinegar and milk, then whisk together.
  4. 4. Add the dry ingredients into the wet and whisk until just combined. Add a little more milk if needed. Pour evenly into the loaf tin and bake for 35 minutes, until a skewer inserted in the centre comes out clean. Leave to cool before serving.
