Chimichurri chickpea burgers

Ingredients

- •1 400g can chickpeas, drained and rinsed
- •2 garlic cloves
- •Large handful fresh coriander
- •* 2 tsp chimichurri seasoning
- •½ tsp ground coriander
- •1 tsp cumin
- •½ tsp sea salt
- •Juice of ½ lemon
- •1 tbsp extra virgin olive oil
- •40g oats
Directions
- 1. Preheat the oven to 180°C. Prepare a baking tray.
- 2. Add all ingredients to a food processor and blend until a coarse mixture forms. Scrape down the side, add 1-2 tbsp water and pulse again.
- 3. Divide the mixture in 2 and place on the tray. Shape into 2 large burgers and smooth out using the back of a spoon.
- 4. Bake for 35-40 minutes, flipping the burgers halfway.
- 5. Optionally serve in a bun with tomato, lettuce and tahini sauce (see recipe).
