Chickpea tacos

Ingredients

- •1 small red onion, sliced
- •1 garlic clove, crushed
- •1 bell pepper, chopped
- •1 tbsp vegetable oil
- •1 400g can chickpeas, drained and rinsed
- •2 tomatoes, chopped
- •1 tsp turmeric
- •1 tsp smoked paprika
- •½ tsp chilli powder
- •½ tsp cumin
- •Juice of ½ a lime
- •Handful fresh coriander, chopped
- •4 tsp ijvar or salsa (optional)
- •1 medium avocado, sliced
- •4 taco wraps, warmed
Directions
- 1. In a large frying pan, heat the oil. Add the onion and cook for a few minutes, followed by the garlic and red pepper. Cook for a few minutes until the onion starts to soften.
- 2. Add the chickpeas, tomatoes, spices and lime juice, and continue to cook on a medium heat for 5-10 minutes. Add a few tbps water if it becomes too dry.
- 3. Stir in the fresh coriander.
- 4. Assemble the tacos in the wraps, spreading a tsp of ijvar or salsa first. Top with avocado slices.
