Chickpea stir fry

Ingredients

- •1 tbsp sesame oil
- •½ onion, chopped
- •1 garlic clove, minced
- •1 red pepper, chopped
- •1 400g can chickpeas, drained and rinsed
- •½ tbsp soy sauce
- •1 tsp maple syrup
- •½ tbsp rice vinegar
- •1 tbsp almond butter
- •2 handfuls spinach
- •2 tsp sesame seeds
Directions
- 1. In a large pan, heat the sesame oil over a medium heat. Add the onion and cook for a few minutes until softened. Add the garlic and pepper and cook for 5 minutes, followed by the chickpeas and cook for another 5 minutes, stirring occasionally.
- 2. To make the sauce, add the soy sauce, maple syrup, rice vinegar and almond butter in a jug and whisk to combine.
- 3. Pour the sauce into the pan and cook for another 5 minutes, stirring until coated. Add a splash of water if needed. Stir through the spinach until wilted. Serve with rice or noodles, and top with sesame seeds.
