Candied orange peel

Ingredients
serves 1 cake decoration
- •1 orange
- •100g caster sugar
Directions
- 1. Peel the orange in strips and cut into desired shape. Remove as much white pith as possible.
- 2. Blanch the strips by covering them in cold water then bring to boil. Drain and rinse.
- 3. In a small pan, whisk together the sugar and 100ml water. Place the peels in the mixture. Bring it to a boil and then simmer until the peels become translucent.
- 4. Roll in white sugar if desired. Allow to dry out for a few hours or overnight before decorating.
