Butter beans with green pesto

Ingredients
serves 2-3
- •1 400g can of butter beans, drained and rinsed
- •2 garlic cloves
- •70g pine nuts
- •Juice of 1 lemon
- •25g basil
- •3 tbsp olive oil
- •100g frozen peas
- •3 large handfuls of spinach
- •¼ tsp sea salt
Directions
- 1. In a food processor, add the garlic, pine nuts, lemon juice, basil, olive oil, salt and a few tbsp of water and blend until a chunky pesto forms.
- 2. In a pan, warm a drizzle of olive oil on medium heat. Add the butter beans and cook for 5 minutes until they crisp up around the edges.
- 3. Add the pesto, peas and spinach and cook for 5-10 minutes until everything has warmed through and the spinach has wilted. Serving with salads, on toast or with pasta.
