Black bean ragu

Ingredients
serves 2-3
- •1 tbsp olive oil
- •½ onion, finely chopped
- •1 garlic clove, minced
- •1 tsp smoked paprika
- •1 tsp ground cumin
- •¼ tsp sea salt, to taste
- •1 400g can chopped tomatoes
- •1 400g can black beans, drained and rinsed
- •2 tsp miso paste
- •Ground black pepper, to taste
Directions
- 1. 1 .In a large pan, heat the olive oil on a medium-high heat. Add the onion and cook for 5 minutes until softened. Add the garlic and cook for another minute.
- 2. Stir the paprika, cumin and salt. Add the black beans, chopped tomatoes, and half a can of water.
- 3. Bring to a simmer for 15-20 minutes, stirring occasionally, until darkened and reduced.
- 4. Stir through the miso paste and ground black pepper.
