Banana peanut butter muffins

Ingredients

- •2 overripe bananas
- •75ml vegetable oil
- •55g soft brown sugar
- •120ml non-dairy milk
- •125g self-raising flour
- •100g wholemeal flour
- •2 tsp baking powder
- •2 tsp cinnamon
- •¼ tsp nutmeg
- •6 tsp smooth peanut butter
Directions
- 1. Heat oven to 180°C. Line a muffin tin with cases.
- 2. In a large bowl, mash the bananas, then add the oil, milk and sugar and mix well.
- 3. In a separate bowl, combine the flour, baking powder and cinnamon and nutmeg. Add the dry mixture to the wet ingredients and mix well.
- 4. Spoon into the muffin cases to fill each one halfway. Spoon ½ tsp peanut butter spread into the centre of each muffin. Cover with the remaining mixture. Bake for 20 minutes, until a skewer inserted into the centre comes out clean.
