Ingredients

- •2 tbsp sesame oil
- •300g beansprouts
- •2 large carrots, grated
- •½ cucumber, chopped
- •100g edamame, cooked
- •4 tbsp reduced sodium soy sauce
- •Juice of ½ lime
- •¼ tsp garlic granules or 1 garlic clove, minced
- •1 tsp ground ginger
- •½ tsp chilli powder
- •Handful of fresh coriander, chopped
- •1 tbsp sesame seeds
Directions
- 1. Heat 1 tbsp sesame oil in a medium pan. Cook the beansprouts on medium heat for 5-10 minutes.
- 2. To make the dressing, mix the sesame oil, soy sauce, lime juice, ginger, garlic, chilli and coriander.
- 3. In a large bowl, mix the beansprouts, carrot, cucumber and edamame. Pour over the dressing and mix well. Top with sesame seeds.
