Almond butter noodle stir fry

Ingredients

- •100g rice noodles
- •1 tbsp sesame oil
- •1 garlic clove, minced
- •1 tbsp soy sauce
- •1½ tbsp almond butter
- •50ml oat or almond milk
- •½ tsp maple syrup
- •¼ tsp chilli powder
- •100g tenderstem broccoli, chopped
- •1 red pepper, chopped
- •100g chestnut mushrooms, sliced
Directions
- 1. Place the noodles into a large bowl and pour over freshly boiled water. Set aside to soak for 5-10 minutes. Drain and rinse the noodles under cold water.
- 2. In a large pan, heat the sesame oil over a medium heat. Add the garlic and cook for 1 minute. Add the peppers and broccoli and cook for a 5 minutes. Add the mushrooms and cook for 5-10 minutes, stirring occasionally.
- 3. To make the sauce, add the almond butter, oat milk, maple syrup, soy sauce and chilli in a jug and whisk to combine.
- 4. Add the noodles to the pan and pour over the sauce. Toss until evenly coated and the sauce has thickened.
