Almond butter granola bars

Ingredients

- •4 tbsp chia seeds
- •150g oats
- •2 tbsp honey
- •50g coconut oil
- •90g almond butter
- •Zest of 1 lemon (optional)
- •1 small overripe banana
- •1 tsp ground ginger (optional)
- •Pinch sea salt
- •50g almonds or cashew nuts, chopped
- •50g dried blueberries or cherries
- •50g pumpkin seeds
Directions
- 1. In a small bowl, add the chia seeds and 8 tbsps of water and set aside.
- 2. Heat the oven to 180°C and line a 20cm square baking tin with baking paper.
- 3. In a food processor, blitz the oats to form a rough flour.
- 4. In a small pan, melt the coconut oil, almond butter and honey together over a low heat. Once melted, remove from the heat. Add the chia seed mix and lemon zest, then set aside.
- 5. In a large bowl, mash the banana. Add the almond butter mixture, then all the remaining dry ingredients and mix well.
- 6. Pour the mixture into the prepared tin and press down with a spoon. Bake for 25-30 minutes or until golden brown. Leave to cool for 20 minutes before slicing.
